Pasta with Cherry Tomatoes and Figs

Ingredients
150 grams Pasta of choice
FOR THE SAUCE:
300 grams Cherry tomatoes (mixed colors if possible)
1/4 cup Olive oil
1 tablespoon Red wine vinegar
1/2 teaspoon Garlic powder
Salt & pepper to taste
TOPPINGS:
75 grams Goat cheese (cubed)
40 grams Prosciutto di parma (parma ham) (pulled apart)
4 Figs (halved)
Fresh basil

Step by Step Instructions
  1. Add the olive oil to a frying pan and saute the cherry tomatoes. Once the skin begins to burst, season them with garlic powder, salt, and pepper.
  2. Prepare the pasta according to package directions.
  3. Once the tomatoes begin to fall apart, stir the vinegar into the pan of sauce, then allow to cook for a little bit longer.
  4. Strain the pasta, return the noodles to the pot it cooked in, and mix them with the prepared sauce. Portion the pasta onto two plates and set aside.
  5. Cook the figs cut-side down in the pan the sauce was prepared in for 2 to 3 minutes.
  6. Top the pasta with figs, goat’s cheese, prosciutto, and basil and season to taste.
