Roasted Pepper and Hummus Veggie Wrap

Vegan!

Ingredients
2 Red peppers (sliced)
1 Avocado (sliced)
1/4 cup Cucumber (sliced thin)
1/4 cup Carrot (sliced thin)
1 cup Spinach
1/4 cup Hummus
Salt & pepper to taste (plus any other seasonings you care to add)
1 tablespoon Olive oil
4 Tortillas
Everything bagel seasoning
1/4 teaspoon Garlic powder

Step by Step Instructions
  1. Preheat oven to 400 degrees and drizzle the pepper slices with oil, salt, pepper, garlic power, and additional seasonings of choice if desired. Roast for 20 minutes.
  2. Spread 1 or 2 tablespoons of hummus on each tortilla, then add spinach, cucumber, carrot, avocado, and roasted pepper slices, and everything bagel seasoning to each.
  3. Fold the wraps, then serve.
